When in Auch don’t neglect to go to the Cathedrale Sainte-Marie, best known for its sonorous organ and rose stained-glass windows along with the 1500 intricately carved wooden stalls. The organ was commissioned by Napoleon III. Do take a look at the Renaissance masterpieces on present there.
